I have been a fan of Mac knives for over 20 years. If you get into the obsessive world of professional cooking knife ratings and shoot outs, these knives always score right up there with knives costing five or six times as much.Not really a knife for knife snobs, but just as good as almost any of the crazy high-end offerings.I have a Mac paring knife, a slightly larger knife, and a 9 inch chef knife. But this one is my absolute favorite. So what is different about it you ask? It is unusually thin. Probably a third, maybe 40% thinner than the chef knife. But for some reason, I think the lack of resistance the thinner blade creates going through tough substances, it is an absolute pleasure to work with. It seems to almost fall through vegetables, fruits and meats. Very unusual, and as I said an absolute pleasure to use. It makes a French chef knife seem like a garden hoe. I love the size handle for my large size hand, and the round tip. The curved edge makes it perfect for rocking on the cutting board for missing chives etc. very very light weight, my wife who has arthritis just loves using it. It’s incredibly easy to sharpen on a medium diamond stone, or any medium grit Waterstone, I think the thinness has something to do with ease of sharpening.One caveat, , something like this is absolutely not made for cutting through heavy beef bones etc. It will ship for sure.
